Uchiko, born from Chef Tyson Cole’s original non‑traditional Japanese concept, carries forward the spirit of Uchi. While the apple doesn't fall far from the tree, Uchiko takes a more fire‑driven turn, layering smoke and char onto the fresh, clean flavors at its core.
